PhD thesis: Territorial Knowledge Dynamics and alternative food: The case of Bornholm

The thesis presents and discusses the theoretical and methodological frameworks, the empirical results and the further implications of six complementary publications, prepared in different research contexts and submitted as parts of the PhD thesis. Empirically, the thesis focuses on one specific study case: the knowledge dynamics, which enabled the innovation of production, networking, marketing and support systems for regional quality food on Bornholm. The thesis addresses the case of the innovation of Bornholm food from two different theoretical perspectives and fields of research: 1) regions, knowledge and learning in the global knowledge economy, and 2) alternative foods and restructuring of markets and producer-consumer relations.
